Ingredients:

1cup  cornmeal

1 cup white flour--or 1/2 cup of white and 1/2 cup
wholewheat

1/4 cup sugar

3 tsp baking powder

1 tsp salt


1 egg
1 cup milk - I prefer to use lowfat butter milk
1/4 cup oil - I usually mix the marmalade and oil together
1/4 cup marmalade - optional


1 cup raisins dark  - increase or decrease to your taste
1/2 cup yellow raisins
Directions:
  1. Combine dry ingredents, add milk, egg, oil and marmalade.

  2. Stir slightly and add raisins.

  3. Bake at 400F for about 20mins

  4. I use 3 small clay bread pans to cook them in.

  5. otherwise a standard 8inch square pan will do just fine
